howitcanbemade,mustbeproducedwithouttheuseofsewer-sludge

fertilizers,mostsyntheticfertilizersandpesticides,geneticengineering

(biotechnology),growthhormones,irradiationandantibiotics.Avarietyof

agriculturalproductscanbeproducedorganically,includingproduce,grains,

meat,dairy,eggs,andprocessedfoodproducts.

"Organic"doesnotmean"natural".Thereisnolegaldefinitionastowhat

constitutesa"natural"food.However,thefoodindustryusestheterm

"natural"toindicatethatafoodhasbeenminimallyprocessedandis

preservative-free.Naturalfoodscanincludeorganicfoods,butnotallnatural

foodsareorganic.Onlyfoodslabeled"organic"havebeencertifiedas

meetingUSDAorganicstandards.

Thephrase'organicfarming'一firstappearedinLordNorthboume'sbook

LooktotheLand,publishedin1940.Butthetruthis,organicfanningisthe

oldestform,ofagriculture.BeforetheendofWorldWarII,farmingwithout

theuseofpetroleum-basedchemicals(syntheticfertilizersandpesticides)

wastheonlyoptionforfarmers.Technologiesdevelopedduringthewarwere

foundtobeusefulforagriculturalproduction.Forexample,thechemical

outofatotalof828millionacresoffarmland.Approximatelytwo-thirdsof

thecertifiedU.S.organicfarmlandwasusedforcrops,andone-thirdwasused

aspasture.

Largefarms,mostlylocatedintheMidwestandWest,producedprocessed

tomatoes,organicwinegrapesandotherhigh-valuecropsonacommercial

scale,whereasnumeroussmallfarms,concentratedintheNortheast,

specializedinmixedvegetableproductionfordirectmarketingtoconsumers

andrestaurants.

Whileorganicfoodcanbefoundthroughoutthecountry,Californiawasthe

leaderinproductionoforganicfruitsandvegetablesin1997,followedclosely

byArizona,Florida,Texas,andWashingtonindecreasingorderoftotalyield.
