PAGEAComparativeStudybetweenChineseandAmericanDietCulturePAGE3-摘要飲食是人類生存和發(fā)展的重要因素。飲食由于不同國家的文化、歷史和地理位置等因素的影響,在食材、口味、烹飪方法、飲食習(xí)慣上都有不同程度的差異。了解中美雙方的飲食文化差異和聯(lián)系,有利于促進(jìn)文化交流,加強(qiáng)溝通。本文希望對中美飲食文化進(jìn)行對比,討論兩種飲食文化之間的共性和差異性。本文采用文獻(xiàn)綜述法對已有關(guān)于中美飲食文化研究狀況進(jìn)行概述,了解國內(nèi)外關(guān)于此方向研究的研究現(xiàn)狀,并挖掘出本研究可以選取的角度以及創(chuàng)新點(diǎn);本文又采取調(diào)查研究以及觀察法了解中美各自的飲食文化情況,搜索相關(guān)證據(jù)作為佐證,再通過對比分析法對所采集到的信息進(jìn)行歸納匯總,做出對比分析,得出相關(guān)結(jié)論,經(jīng)對比研究后本文提出透過中美不同的文化價(jià)值觀,可以從飲食觀念、飲食結(jié)構(gòu)和餐桌禮儀三方面的飲食文化內(nèi)涵進(jìn)行了研究,并且進(jìn)一步分析中美飲食文化的對立統(tǒng)一性,以及二者相互融合的趨勢。根據(jù)其共性特征以及差異性,從文化傳統(tǒng)和歷史角度討論其原因。最后,作者提出自己對中美飲食文化的思考。了解兩國的飲食習(xí)慣有利于促進(jìn)飲食文化的融合與發(fā)展。關(guān)鍵詞:中國;美國;飲食文化;共性;差異性AbstractDietisanimportantfactorforhumansurvivalanddevelopment.Duetotheinfluenceofculture,historyandgeographicallocationofdifferentcountries,therearedifferencesiningredients,taste,cookingmethodsandeatinghabits.UnderstandingtheculturaldifferencesandconnectionsbetweenChinaandtheUnitedStatesisconducivetopromotingculturalexchangesandstrengtheningcommunication.ThisarticlehopestocomparetheChineseandAmericandietcultureanddiscussthesimilaritiesanddifferencesbetweenthetwokindsofdietculture.ThisarticleusestheliteraturereviewmethodtosummarizetheexistingresearchstatusofChineseandAmericandietaryculture,tounderstandthecurrentstatusofresearchinthisdirectionathomeandabroad,andtodigouttheanglesandinnovationsthatcanbeselectedinthisstudy.ThisarticlealsoadoptsinvestigationandobservationmethodstounderstandtherespectivedietaryculturesofChinaandtheUnitedStates,searchforrelevantevidenceasevidence,andthensummarizeandcollectthecollectedinformationthroughacomparativeanalysismethod,makeacomparativeanalysis,anddrawrelevantconclusions.Afteracomparativestudy,thisarticleproposestopasstheSino-Americandifferentculturalvaluescanbestudiedintermsofdietaryculturalconnotationsintermsofdietaryconcepts,dietarystructure,andtableetiquette,andfurtheranalyzethecontradictoryunityofSino-Americandietaryculture,andthetrendofintegrationbetweenthetwo.Accordingtotheircommoncharacteristicsanddifferences,thereasonsarediscussedfromtheperspectiveofculturaltraditionsandhistory.Finally,theauthorputsforwardhisthoughtsonChineseandAmericanfoodculture.Understandingthedietaryhabitsofthetwocountriesisconducivetopromotingtheintegrationanddevelopmentoffoodculture.Keywords:China;AmericaDietcultureCommonalityDifferencesContents摘要 tivity.Itcannotonlydeepentherelationshipbetweenfriendsandrelatives,butalsosharethedietwithstrangers.Therefore,Chinesepeopleliketoadddiettootherswhentheyareeating,indicatingthattheyareclosetoothers.AmericansaredifferentfromChinese.Americanspayattentiontotheirindividualityandindependence.Theyareusedtobeingseparatedfromotherswhentheyeat.Americansusuallyordertheirownmealsandholdoneforeachmeal.Theyareunwillingtosharedietwithothers.Evenatfamilydinners,onepersonoftendistributesthedietinthelargeplatetothewholefamily,andeveryoneseparatesandeatsintheirownsmallplates.(韓蓉,2019)IntheeyesoftheChinese,thisisunavoidablytooindifferentandlackshumanity,andAmericansareusedtoit.Becausetheythinkthatsuchamealsharingcanreflecttheconceptofhygieneandeconomy,notonlyavoidwaste,butalsoprotectthehealthofindividualsfromtheinfluenceofothers.Fromahygienepointofview,theAmericanmeal-sharingsystemdoeshaveitsmerits,becauseduringmeals,manypeopletalkwhileeating,salivaisflying.Andotherpeoplepickandchoosebetweendishes.Evensomehostsinordertoshowenthusiasm,taketheinitiativetopinchdishesforguests.Suchbehaviorsoftencausethespreadofthedisease.Therefore,itisslowlybecomingcommonpracticetoplacecommontablewareonChinesediningtables.III.ReasonsforsimilaritiesanddifferencesindietculturebetweenChinaandAmerica3.1Culturaltraditionreasons3.1.1CulturaltraditionreasonsforsimilaritiesBecauseculturesareintegratedwitheachother,differentculturesnaturallyinfluenceeachotherundertheinfluenceofcross-culturalcommunication,whichwillnaturallyformcertaincommoncharacteristics.TheexchangebetweenChineseandWesterncultureshascreatedafusionofChineseandWesterndietcultures.Thestudyofthecommonalityofthetwodietculturesnotonlyhelpspeopletounderstandtheessenceofeachother'sdietculture,payattentiontoeachother'setiquette,andatthesametimeseekcommongroundwhileshelvingdifferences,effectivelydealwiththecommunicationobstaclesandevenconflictsencounteredincross-culturalcommunication.Thetwocomplementeachother'sstrengths,anddrawontheessenceoftheirrespectivedietarycultures.Naturally,therewillbecommonadvantagesintheirrespectivedietarycultures.3.1.2CulturaltraditionreasonsfordifferencesChinaisacountrythathasalwaysattachedimportancetodietandbeverages.Duringtheevolutionofcivilizationoverthousandsofyears,ithasformedacolorfuldietandbeverageculture.Comparedwiththeculinaryartsofothercountriesornations,Chinesecookinghasitsowncharacteristicsbothintheselectionofdietingredients,cookingtechniques,thedesignofdishes,thetreatmentofseasonings,andthenamesofdishes.FortheUnitedStates,thediversityofhumanfactorsismorecriticalthanthelocalgeopoliticalfactors.(任闖,2019)TheUnitedStatesisaplaceofimmigration,soAmericanseatdietfrommanydifferentcountries.WhenpeoplemovetotheUnitedStates,theyalsobringtheirowncookingin.Asaresult,typicalAmericandietisrareexceptforThanksgivingturkey.MostAmericanseatdietsthataresimplyprocessedfromforeigndiets.Forexample,Hamburgsteak,asweallknow,wasoriginallyatypeoffriedbeefburgerinGermanburger.ItwasintroducedtotheUnitedStatesfromGermanyattheendofthe19thcentury.In1932,somepeoplefriedthisfriedbeefpieintobunswithsesameseedsonthesurfaceandserveasastapleorsnack."Peopletakedietastheirheaven"isauniversallyacceptedtruthoftheChinesepeople.Similarly,although"eating"isnotvaluedintheAmericanlifeasmuchastheChinese,itisalsoanormalthinglikeair.However,itisthetrivialthings"eating"and"drinking"thatcanreflectthedeepestandmostcorepartofaculture.FromthedifferentdietculturesinChinaandtheUnitedStates,suchasproductionmethods,eatingmethodsandtablemanners,wecanseethatthecorevaluesofthetwoculturesarequitedifferent.ItisjustthattheChinesedietcultureisextensiveandprofound,andhasalonghistory.Therearedifferentcuisinesinvariousplaces,andtherearesomecommoncharacteristicsbetweeneachcuisine,whichtogetherconstitutetheChinesedietculture.Americahasahistoryofjustover200years.AlthoughimmigrantsfromallovertheworldhavebroughtaboutthediversityanddiversificationofAmericandietculture,theyhavenotformeduniquedietarycharacteristicswithAmericancharacteristics.TheUnitedStatesisameltingpotofpeopleoftheworld,andtheformationofAmericandietdishesalsocomesfromthe"meltingpot".TheimpactofBritishdietcultureonAmericandietintermsofproductionmethods,eatinghabits,andtablemannersisirreplaceableinothercountries.Therefore,theAmericandietculturediscussedinthisarticlewilltakeintoaccountthecharacteristicsoftheAmericandietinthecontextofWesterndiet,andwillalsocombinetheuniquenessofAmericanhistoryandculture.3.2Historicalreasons3.2.1HistoricalreasonsforsimilaritiesSinceancienttimes,Chineseandwesterndietcultureshavebeguntocommunicateandmerge.Thecontentoftheexchangesbetweenthetwosidesisatwo-wayflowandfluctuatingchanges.PriortotheMingDynasty,Chinawasdominatedbyoutputandsupplementedbyinput,butwesterncountriesweredominatedbyinputandoutputassupplement.BytheMingandQingdynasties,therehadbeenagreatchange,andtheexchangesbetweenthetwosideshadmorecontent,andthescaleandinfluencehadalsoexpandeddramatically.TheexportofChinesedietculturetotheWestchangedfromhightolow,mostlyconcentratedonthema
